The one document on my hard drive that I used Apple’s built-in OCR on, a 2023 tax form, shows up as the first hit in Spotlight when I searched for a randomly-chosen text string that’s in it. It doesn’t show up in Launchbar, but I don’t think I’ve explicitly told Launchbar to index that folder, so I didn’t expect it to.

I just thought of of one thing. ChatGTP is rather killer at text recognition. Could be worth testing that option if you are using that. I asked if it could do it on .pdf files and it should work but I have not tested it.
Late but…
Buy a separate doc scanner like the industry leader from the Fujitsu Scansnap range.
Scan the doc then OCR afterwards, for fastest results typically, versus scanning and OCR-ing each page at the same time.
Spotlight takes a while (minutes to hours) to add any new doc to its index.
