I’m running Golden Gate on my M3 MacBook Air. These are things to check:
In Mail /Settings/Fonts & Colors change Fonts and size.
In Settings app /Accessibility/Text change it to something that works for, using Custim settings
In Settings app /Appearance / Liquid Glass
In Settings app /Display see Contrast settings
