I recently upgraded my iMac 2019 from Catalina to Sequoia and I regret it. It is a mess. I’ve run into several problems:
I have bad eyesight and need keyboard shortcuts for a number of items, both for specific programs and for universal use (for example, I had the ability to save a document as a PDF using ⌘P followed by ⌘⌥P and it would work beautifully. Now I cannot do that, it requires me to click on the PDF icon. There are a number of other keyboard shortcuts I want but, though I followed the Apple instructions the correct screen does not show allowing me to set them up.
before the upgrade I programmed the space bar so when I selected a file I could press the spacebar and it would act like Quick Look and allow me to view the contents. Now if I press the space bar nothing seems to happen but often the whole system goes nuts, and it will not allow me to insert a space in my typing. If I move to another program and then go back it might fix that, but not always, and my tab key acts in a similar manner.
I cannot get graphics in any of my e-mails and also on some of the websites I visit. Instead I just get a blue icon. This is really exasperating because many e-mails include graphics with text that include data and links I need. The upload shows what I see.

You are not alone in your issues with keyboard shortcut and recent macOS updates. I don’t have any tips for you but others may have some solutions.
With the Mail issue, it is possible that recent “privacy” improvements have introduced blocks to the displaying of images. Check this Mail setting to see if it affects things:
I had been annoyed by the “Load Remote Content” button that is part of the Protect Mail Activity, largely because it appears offscreen and I have to scroll up in the message to make it show up at the top. But recently, perhaps starting with Sequoia, it seems to remember which senders are allowed to show remote content. For example, the daily mail from the Free Press summarising their articles would require me to find that button and press it every day, but now remote content is loaded automatically. I still see the button (when I scroll for it) when looking at a mail from someone new, and then I can choose whether to use it. This makes sense.
When the OP says he programmed the spacebar ‘to act like’ QuickLook, I wonder if a third party utility was used, as the Spacebar is the default way of activating QuickLook? Or was this through some Accessibility setting related to his poor eyesight?
Finally, cmd-opt-P in my print dialog brings up a Document Properties box when printing a text file, but does nothing when printing a PDF. There are no keyboard shortcuts shown in the PDF dropdown of the print dialog box. However, there is an Edit Menu… option, which allows one to set a default action, which for me is set to Save as PDF, so a single click on the word PDF on that menu opens the save dialog. If I click on the downward pointing arrow to its right, I see the whole menu for other options. This might save some frustration for you.
I’m not sure what you’re doing, but it still works for me to create an All Applications shortcut in System Settings > Keyboard > Keyboard Shortcuts > App Shortcuts.
That’s the default behavior; you didn’t have to do anything to make Space bar work for Quick Look. In the Finder, Quick Look also works with Command-Y. Could you have used Keyboard Maestro or some other utility to remap the Space bar somehow? I’d check this in another account on your Mac.

I still have found no way to get graphics to appear in my mail. I tried everything, sought assistance online, checked with Apple Support online but nothing seems to work.

Wow, that works for an individual e-mail. Thank you. Once that is done the e-mail remains with everything showing. Much appreciated. Still not sure how to make that the default setting. I go to settings in mail, select privacy and check Protect Mail Activity and no change, I go back and uncheck that and Hide IP address is checked, and no difference, so I leave Protect Mail Activity checked instead. I’ve looked for other options in the System Settings but nothing offered. It would be nice to make the default to be Load Remote Content in every window but this is a significant help! I’ve been having to use my iPhone mail to see if there was anything in the mail that I needed to follow up on.
I think you have to turn off the privacy settings for it to automatically load remote content. But if you want them on, then it seems (as I wrote above) that it slowly learns which senders are allowed to load remote content without you having to click the button every time.
