Great news on this. I just got a new iPhone 13, which has an updated Watch app (I guess this is a function of the new iOS, not the new phone, exactly). Anyway, interestingly the new Watch app in the General section now shows “Storage” as opposed to “Usage” that I think it used to show. Anyway, mine showed 2.7GB free, as opposed to the 1GB where it has normally hovered in the last year. So I was able to update my Series 3 watch to v.8 without having to go through the re-pairing BS. And it worked! First time I have been able to update my Series 3 watch without wiping it and re-pairing it for a year or so. so much easier.
