APFS or macOS Extended, for a RAID in Mojave?

Hello, and Happy New Year, all!

I’m using two 8 TB Western Digital ‘My Book’ external drives via USB 3, and am wondering which is the better, most stable formatting option; APFS or MacOS Extended for this two disk RAID?

Any recommendations?

… it’s my beloved iTunes collection that’s to be housed on this RAID, so really don’t want to risk loosing a drive.

What software are you using to create the RAID? I would suspect it would have a recommendation. SoftRAID developer Tim Standing has been one of the great sources of details on APFS since it came out.
