What about a tripod or other camera stand to mount an iPhone on, to record video while I'm seated

I think, given how crowded the podcasting and vlogging space is now, it is difficult to attract and retain an audience with basic production values unless you’re already a celebrity. Shaky video, blurry video, or muffled audio are all barriers to getting people to spend more than a few seconds checking out their first episode. So—and I agree if somebody already owns some gear to test it out before buying anything—I believe a tripod and a mic are the bare minimum these days.

I finally found the link for an iPhone holder I’d bought in 2021 to attach to a desk or table. It did not stay prettily smoothly curved as pictured. And it does indeed sag with the weight of the phone, sometimes swinging up and down. Something that stays at fixed angles like you say, sounds attractive.

To be clear, I do not recommend this product. That’s why I asked the topic question to get better ideas.

I use my MacBook Pro as a phone stand. Prop the iPhone against the screen and adjust the angle and distance appropriately.

It works very well and has the merit of being free!

Ho ho ho! Well, I paid for it back in 2020 (an M1) so I consider it free now! However, you could always go down market and use a Windows laptop.

I happened to already have a camera tripod and a Quadlock case, so getting a Quadlock tripod adapter was the cheapest option for me. Works OK.

If you’re going to do a podcast, you need to get remote mics. Relying on the built-in mic will sound terrible. Rode and DJI seem to be the popular brands for these.
