Problem with Mail message header

My wife has a problem with the message header in Mail and I’m stumped. Any suggestions?
The first attachment is an image of her current header and the second image (header_p) is how mine looks which is the header she is accustomed to.

Open a message, then use the Customize Toolbar menu command.

Thank you Gordon. Worked perfectly. I have no idea how Louise managed to change the value since there is no keyboard command for the feature. She also managed to turn on Voice Over Utility unwittingly. I managed to fix that.
