I’m finally upgrading from an iMac running Mojave to a new M4. Is there a formal deactivation process that I have to do to move Office 365 from one Mac to the other?
I can’t find anything specific to Office 365 and the Mac.

If you are subscribing to Microsoft 365 every year for multiple licenses, I have found that there is no formal dw-activation process. When you bring up the new box, log onto microsoft.com with your Microsoft ID and download the installer. Then run Word or Excel to activate, again using that Microsoft ID.
Single license subscription may be different.
You don’t need to do this, but if you go to the web at https://account.microsoft.com/services/microsoft365/detailsand log in to your Microsoft Account you should see a list on the left that says “subscriptions”. After clicking subscriptions, in the main area there is a link “Install Desktop Versions of Office 365 Apps…”. Click that and it will overlay a box to “Install” the Office apps - here click “Cancel”, and on the web page behind you should see a list (you may need to scroll down) of all devices that have Office 365 installed, with a link to “Sign Out” on the right.
I think this is only critical if you have used up the 5 device limit that Office 365 allows for installation.
Are you using a standalone, permanent license version of Office 365, or are you using a subscription license?
If you are using a standalone license for Office 2021, 2019, or 2016, you can transfer it to another computer. The specifics depend on the edition. If you are using an edition that is designed to be installed on one computer (like Office Home & Business, Office Home & Student, and Office Professional), you will need to remove it from the old computer, install it on the new computer, and then call Microsoft to activate the license on the new computer.
If you are using a different type of license or a subscription, you can manage your licenses (including disabling old licenses) online, as @ddmiller indicated.
