When you change the layout to have more icons on a page, it doesn’t move icons up to the first page - you have to do that on your own.
Which is kind of frustrating because if you change the layout to have less icons on a page, it will move the extras (whatever won’t fit) to other pages. And then when you put the layout back, the icons stay where they were.
As for resetting it, I haven’t tried it, but I found this article:
There’s apparently a default that tells the Dock to reset its layout. I don’t know if this is just icon positions or if it also resets the grid sizes. But if you really want to start over from scratch, it’s probably worth a try. Then you can set your grid to 10x7 and drag everything from page 2 to page 1 and organize it the way you want.
I have it set up so that only apps I frequently use are all on the first page. I find that a quick sweep to a corner of the screen where large icons await in the same order as always sometimes suits me better than the dock.
I just had a look at Launchpad on a friend’s iMac. There were a number of icons for apps that no longer work after he had updated to Monterey and have the no-entry sign superimposed.
I cannot get rid of those icons. removing the App didn’t remove the the launchpad icon and I seem to be unable to drag them to the trash. Making them jiggle (as on an iPad) doesn’t let me delete them.
Other icons have an X (as on the iPad) but these don’t .
Any ideas anyone?
It’s not a big issue. He would just like to get rid of them if possible.

No it didn’t work. I had removed the offending Apps but the icons remained in Launcher. They were greyed out and not in colour but I couldn’t remove them.
As I said, Not a big issue really.
Apologies for this flurry of comments, but I’m feeling thoroughly embarrassed that, although I knew the app icons on the iPad and iPhone could be moved around, I had assumed that the ones in the Mac Launchpad were just fixed in place.
Although I usually use Alfred, Launchpad comes in useful when you can’t remember the name of the application you want to launch. (I guess that’s an embarrassing admission, too.)
Actually, I have piles of apps in my Dock. However, there are some which I do not use as frequently. For that, I have the “Applications” folder in my Dock as well. As far as I know, when I open that, it in fact launches LaunchPad.
The times I triggered LaunchPad was by mistake. I found it incredibly obtrusive.
After a few times, I just disabled it.
To Launch applications, I use LaunchBar via keyboard commands. MUCH faster. LaunchBar is a GREAT utility, BTW. It can also augment Spotlight somewhat.
I do keep necessary application icons in the Dock, but keep it hidden and only occasionally use it to launch things, like drag and drop groups of documents to open them together.
