Yesterday I tried to create a boot USB stick with High Sierra and the installer said it required 19plus Gbytes.
So I would recommend a 32 Gbyte USB stick, or better an external HD
I previously tried successfully to format the USB stick to APFS and then back to Master Boot.

8GB is plenty big enough for the OS, but depending on how many apps you want to test and their requirements, you might need more.

Thanks! I was thinking 16 or 32gb. I forgot to mention I have an early 2015 MBP.

I used to do partitions on external hard drives for different operating systems, especially in the early days of OS X. Now with USB sticks and SD cards being so damn cheap (and small in size!), I thought I should take that practice up again.
