I absolutely refuse to use either Google or Bing.  I always set my default search app all my Macs and iOS devices to DuckDuckGo.   I hope Apple keeps this option in all future updates.

DuckDuckGo is so inferior to Google it’s almost laughable. I use StartPage on All my computers, PC and Mac. It gives you a Google search without subjecting you to the things you think you hate about Google. However, I use DuckDuckGo on my iPhone but only because Apple hasn’t provided StartPage as a search alternative and I find StartPage’s app a bit inconvenient.

I can't think why they would remove it.

I use DDG (some) and Google (most). There are certainly benefits to have Google's history and when I am logged in I get "better" results (more relevant to me). You are definitely giving up a lot of usefulness by not using Google, but DDG is ok.

Maybe I'm wrong, but I thought Siri would only work with the partner that pays Apple. I think it was originally Google, but MS outbid them and we got stuck with Bing for the last few years.

Apple and Google have not disclosed the rate for the Siri deal, but Apple has acknowledged that Siri isn't nearly as smart as Alexa or Google, and during the last big Apple dog & pony show, Tim Cook & gang stress that Siri would be getting smarter. Probably the only voice search that's dumber is Cortana. And I wonder how much a recent Alexa/Cortana deal was influenced one or another of these changes:

Two different things here, I believe.

A user can change the search provider in many/some/most apps but that's wholly separate from the search technology being Siri.
